A hearty salad of beef, laced with a chili and lime dressing. Easy to prepare, fabulous complex flavors, and a sure bet to impress your BF.
INGREDIENTS:
2 X
1 red onion, finely sliced
1/2 cucumber, finely sliced into matchsticks
1 stalk lemon grass, finely chopped
juice from 2 limes
1-2 tbsp fish sauce (I prefer 2 tbsp)
2 tbsp chopped spring onions
2-4 red chillies, finely sliced, to garnish
fresh coriander, Chinese mustard cress (if you can find it) and mint leaves to garnish.
STEP 1
Pan-fry or grill the steaks until medium rare. Let them rest for 10-15 minutes.
STEP 2
When cool, thinly slice and place in a bowl.
STEP 3
Add the sliced onion, cucumber matchsticks and lemon grass.
STEP 4
Add the spring onions. Toss and season with lime juice and fish sauce. Serve at room temperature or chilled (I prefer chilled), garnish with the chillies, coriander, mustard cress and mint.
This is the perfect dish to use of chop sticks...even for a novice, like myself. Makes a great mid-day meal-in-itself, or as a compliment to a full course dinner.
I've followed this same recipe, replacing the sirloin beef with everything from beef fillet to pork loin, with good results.
P.S. Also, as a personal preference, I only serve a glass of cold (or iced) water with a slice of lemon or lime when serving Thai cuisine. The flavors are too complex for wine or beer...Lao-ta Khun (up to you).
